FOOD AND WINE PAIRING REPORT

• Develop a 10 course- international tasting style menu

• Each course must be from a cuisine type that is featured in the Exploring Wines course

• Each course must be paired with a wine so that the origin of the wine matches the region of the dish

• Each wine should be a complementary match to the food being served

• The meal must flow through contemporary tasting course progression. It should have a variety of hot & cold appetizers, palette cleanser, small entrees, and finish with dessert style courses.

• After the menu is prepared- a paper detailing the decision process of each course, its region, and paired wine should be discussed.
